How to make Easter Rice Krispies Treats
The method of cooking these treats is similar to classic Rice Krispie treats with the addition of dipping the tops in white chocolate and sprinkles.
First, prepare a 9×13 baking dish. Cut a piece of parchment long enough to hang over the sides of the dish, then spray the inside with a light coating of cooking spray and set aside.
In a large nonstick pot, melt the butter over medium heat on the stove.
When the butter is melted, reduce heat to low and add the marshmallows and salt. Note: Omit salt if using salted butter.
Stir slowly until the marshmallows are completely melted into a thick, gooey sauce, then stir in the vanilla extract.
Remove from heat and pour in the rice cereal.
Fold the rice cereal into the marshmallow cream until the mixture is completely coated and mixed throughout.
Spoon the mixture into your prepared parchment-lined baking dish and use the back of a spatula (or the palms of your hands) to press the mixture into an even layer into the dish.
Since we are cutting these out, you’ll want them a little thinner than you might be used to.
About an inch or so thick would be fine.
Allow the mixture to cool to room temperature, then press an egg cookie cutter into the rice treats to cut out shapes.
Set them aside on a piece of parchment until you’re ready to decorate.
Dipping Rice Krispie Treats in White Chocolate
To melt the white chocolate, add chocolate chips or candy melts to a large microwave safe bowl or tempered glass measuring cup.
Then microwave in intervals of 20 seconds, stirring in between each, until completely melted.
Add the coconut or vegetable oil into the melted chocolate to make it nice and smooth for dipping.
Dip one side of each egg treat into the white chocolate and let any excess drip back into the bowl.
You may need to dip twice to get a good coating. I recommend letting it set for a minute or two before dipping a second time.
Immediately dip or spoon sprinkles over the white chocolate and place the treats decor-side up to rest and allow the white chocolate to harden and set completely.
You can place the dipped Rice Krispy treats in the refrigerator to speed up the process. Once the chocolate has hardened, enjoy!
Tips and Tricks
A couple tips to make sure you don’t waste any of the treat mixture!
- Press your cookie cutter cutouts as close to one another as possible to avoid too much space between each cutout.
- If you’re left with a lot of excess treat material, you can take pieces and press them together inside of the cookie cutter, using it as a mold to get the shape right.
Store leftovers at room temperature in an airtight container or on a plate covered with plastic wrap.
These treats will stay yummy for 4-5 days when stored properly.
